Meet Ilaria Bertinelli
Illy, as she is affectionately known, was born in Parma, Italy, to a family of farmers and producers of Parmigiano Reggiano cheese. In 2010, her daughter was diagnosed with both type 1 diabetes and coeliac disease, at the age of six. This prompted Illy to completely change her whole family’s approach to eating as she began to understand the difficulties faced by those who require a free-from diet. Her experiences ultimately inspired Illy to write her best-selling book, ‘A Chef for Gaia’ – a book containing all gluten-free recipes, designed to help other people experiencing the challenges of finding effective and tasty, free-from dishes.
